Tell us a bit about yourself and how your cooking journey started!

My major influence was my mother, and she has been cooking with me since I was a little kid. Being from Ecuador, most of my cooking is inspired in Latin American cuisine, and some in Lebanese food.
What is your biggest pet peeve, food related or otherwise?

People that don't use blinkers.

What is your favorite kitchen memory or bit?

Making apella by myself for the first time.

What is the best piece of advice you’ve received (ever or recently)?

Peel ginger with a spoon.

The Beef Carpaccio at Happa.
